Bombine ardéchoise, as the local casserole is known, used to be an economical way to use up potatoes.
A dish that’s all about celebration and friendship
A specialty of the Ardèche countryside, bombine is a potato-based dish served with carrots, onions and black olives and pieces of bacon, lamb or veal foot. Although there are as many recipes as there are villages, this "poor man's dish" was traditionally cooked in a casserole dish in the fireplace, where it was left to simmer for hours.
